I finally made a recipe found via pinterest! A friend of mine pinned it, after checking it out I did as well. Having two of the key ingredients ready and in need of use, I decided to make it. Here’s where you can find the recipe: Quinoa salad
I admit I changed mine slightly. I added just a few snips of cilantro, as well as a whole lemon. Coming soon will be a picture and of course a recipe review. Look for it at the bottom of the page. As I type this my salad is currently chilling in the fridge.
Update for June 4th
As promised, a picture! My only recommendation on this recipe is don’t leave out the feta cheese. While it tastes good, I think having feta would make it that much better. It’s simple and relatively quick to do. The longest step is waiting for the quinoa to cool enough. While looking up various quinoa recipes I even found a few people who made it in their rice cooker. Not something I would try but it does cook in a similar fashion to rice so I see how that might be useful.
I also chose to make mini blueberry muffins. I tried to have Q help me with these, but unfortunately there wasn’t much for him to do beyond helping to measure the flour. Here’s a picture of our muffins.
